For anyone still thinking about this (and missed it), an even cheaper solution at about half the price (with potentially better support from the community) would be a used thin-client via ebay.
This one in particular is very close in performance (20% slower thread and 25% slower overall) and expandability, although it’s a tiny bit larger:

If you want to use on of these for OctoPrint, you could probably drive more than a few printers at the same time with this amount of power for much less than the cost of a comparable Raspberry Pi.
I saw at least one youtuber with a video providing instructions on building one of these (or possible an older sibling) for OctoPrint.
